Katana Saya Olivewood 24cm Kiritsuke Knife
A brilliantly versatile knife, the Katana Saya Olivewood Kiritsuke Knife is capable of handling most kitchen tasks. Literally meaning 'split open' the kiritsuke knife is a multipurpose traditional Japanese knife, but is only found in the hands of well respected Executive Chefs and Masters of the Kitchen.
Larger than the Gyuto, this blade can handle both jointing and filleting meat and fish more easily. At 24cm with a pronounced heel and squared tip the Kiritsuke is both robust and excellent for slicing or caring meat and large pieces of fish. The Eastern Olivewood range comes gift boxed with a wooden ‘Saya’ that offers fantastic protection for your knife, protecting yourself and others from its supremely sharp edge.
The blade has a 67 layers of VG-10 Damascus steel, the highest quality steel with a high carbon content that gives it exceptional strength and durability. The exquisite craftmanship in these knives can be seen in the elegant layered damascus pattern on the blade. The blade is finished with a light olivewood handle which strikes a balance between opulence and hard wearing-durability.
